I have decided to prepare another half recipe and upload new pictures.
INTRODUCTION
I already have many fruit cakes recipe and it is the curiosity that prompted me to prepare this fruit cake. Before I went on introducing this fruit cake recipe, if you are interested, you can have a look at my various fruit cake recipes, some of them are really delicious. Obviously this 3 ingredients fruit cake is a very popular fruit cakes overseas and it seems that it is an award winning cake. What amazed me is the simplicity and it is egg free, oil free and uses much less sugar than the normal cake. Therefore, my curiosity arose and I want to try out the cake.
In this illustration, it is not a smooth illustration and I should have prepared a cake that look like one above. There is no technical difficulty and even kids can do it . It’s beauty is its simplicity but i did not do it well but I do not doubt the original recipe but my own mistakes. It is my fault . I made 2 critical mistakes
My very first mistake was I did not line or grease the pan. I was busy doing a few things at the same time, thinking that non stick baking pan should be non stick, therefore, I forgot to grease with butter or line the pan with baking paper which I usually did. As a rather experienced house chef, how can I forget about this since not all non stick pan are created equal. I cannot unmould the cake and at the end I have to cut out the cake and that make make the cake does not look like what it should be. I have used my way to put the cake back in shape. The lighter patches are actually those from the side that I try to “fill” the irregular surface.
When I cut open the cake and look at the cake structure. I was rather shocked that the cake is very compact. I took a bite, it is soft and delicious. Though delicious, it just does not look like those in the internet which looks much fluffier.
I sat down and ponder, thinking hard what could have went wrong. Mine is more compact and those in the internet appeared to be fluffier. The only conclusion was that the baking powder in my self raising flour is not working or expired. It is not functional . Luckily, though compact, the cake is still moist, soft and delicious because of the fruits.
This recipe is very simple, egg free, diary free, alcohol free and fat free. I do not have much expectation on the cake. The cake only uses 3 ingredients : mixed fruit, fruit juices and self raising flour. Therefore, the deliciousness of the cake is very much depend on the fruit juices you used. I saw some recipe called for coffee, tea and etc.. It is up to you to select your favourite fruit juice. With only 3 ingredients , of course the taste cannot be compared with traditional long winded fruit cake loaded with butter, alcohol and eggs. But you can always have a slight twist to add in vanilla essence, alcohol such as rum or in fact, replace part of the fruit juice with melted butter.

CONCLUSION
I hope you are not disappointed to read this post. Because of the baking powder ineffectiveness and the unmoulding problem that make it a less than attractive cake, I believed you may have lost confidence on the recipe. But , all recipes in the internet are almost the same and I am just highlighting to you that there is such a recipe available in the internet. Feel free to use recipes from other sources as it will come back to the same recipe. Lastly, if you have kids, this recipe is very suitable. It is alcohol free and much less sweet than the traditional version. Possibly you want to try on a smaller scale.
