Swine Stew Soup aka Pig Organ Soup (潮州猪杂汤)

INTRODUCTION

Me, my wife and my boy are big fans of this traditional Chinese soup originated from Chaozhou, People’s Republic of China. Before we get married, both of us will have this soup at least once a week and we have tried many stores. Until today, our common favourite store is still in Jalan Krukup near Manhattan House though she preferred the Tiong Bahru store because there are more exotic cuts are included.

Literally translated from its Chinese name, the name of the soup is “Pig Organ Soup” meaning the soup is prepared using the internal organs of a pig. However, being raised and born in Malaysia, as I do not like my recipe title too obvious, I have decided to name the recipe as Swine stew soup.

There is no fixed and fast rule as to what need to be included in this soup. Any part of the pig’s internal organ can be used and if you do not fancy eating any of the internal organs, you can always used meat balls or fillet only. For this illustration, I have tried my best to secure as many parts as I could and that included: fen Chang (粉肠 a type of pig intestine or literally translated as flour intestine), pig liver 猪肝, big bones 大骨, heart 猪心, pork belly 五花肉,pork fillet 梅肉  and meat balls 肉丸. Other that can be considered are :stomach 猪肚 , spare ribs 排骨 , pig tail 猪尾,pig big intestine 大肠,tongue 猪舌, blood 猪血, lungs 猪肺, kidney 猪腰 etc.

The quantities of the recipe is also for reference, a bit more or less is acceptable and it is impossible to give an exact recipe but to detail the preparation method. There is nothing difficult to prepare this soup . The most important is the patience to get a bowl of flavourful soup and the next is to get the right texture of the organs in the soup. I also have a discussion to the butcher before I prepared the soup and I sincerely asked him to share with me the sequence and timing of the various organs added.

Since this is a Teochew dish and it is very logical that this dish is paired with salted vegetable . Salted mustard is a good vegetable for stew since it can withstand long hours of cooking. In addition, the vegetable also need long hours of stewing for the flavour to develop and therefore, it is a good choice to be  stewed together with the pork bones to get quality stock.

There are many variations in between the regions. In Singapore, mostly white rice was served but in Melaka, they served it with yam rice together with the soup. Hmmm, I was rather surprised that Wikipedia does have a definition for this special soup dish. As per Wikipedia ,

Pig’s organ soup (simplified Chinese: 猪杂汤; traditional Chinese: 豬雜湯; pinyin: zhū zá tāng; Pe̍h-ōe-jī: ti-cha̍p-thng, tu-cha̍p-thng) is a Malaysian and Singaporean soup originating in Teochew/Chaozhou, China. The dish is a clear and refreshing soup; the reason why sometimes referred just as chheng-thng (清湯), served with other optional side dishes as well as rice. The broth is boiled from a mix of pig offal including liver, heart, intestines, stomach, tongue,blood cubes, as well as pork meat slices, strips of salted vegetables, lettuce and a sprinkle of chopped onion leaves and pepper. Side dishes include braised tofu puffs, and eggs and salted vegetables sometime are served. WHAT IS REQUIRED

Servings: 4-6 adults

  • 2 pork big bones
  • 1 medium size piece of pork belly
  • 1 medium size piece of pork fillet
  • 1 pig liver , sliced thinly
  • 1 pig heart, sliced thinly
  • 1 packet of pork balls
  • 1 fen chang or pig intestine
  • 1 big stem of salted vegetable , cut into big sizes
  • 5 cm of ginger, sliced
  • Few sprigs or coriander or Chinese celery or spring onion
  • Dashes of white pepper
  • Some deep fried shallots

STEPS OF PREPARATION

  • In a pressure cooker pot, put the ginger and salted mustard, put the pork big bones , add adequate water (about 2 inches above the big bones) and pressure cook the big bones of salted vegetable for at least 45 minutes. If you prefer, you can blanch the pork bones in hot water first before put it in the pressure cooker. I did not do the blanching because I will sift all the scum at the later step.

  • Once the broth cooled down, open the lid, add pork belly and fen chang (pig intestine), pressure cook again these two items for about 15 minutes.

  • Take out the pork belly, fen chang and salted vegetable, sliced them into smaller size and set aside. Discard the pig bones.

  • Sift the pork broth into another big pot and bring to boil over the stove.
  • Meanwhile, put some corn flour on the sliced pork liver, heart and pork fillet. Stir until well mixed.  Blanch the pork liver, heart and pork fillet separately, dish out and and set aside. The timing of these 3 items are about 2 minutes, 3 minutes and 4 minutes respectively. Of course, you can adjust your own timing depending on the texture you are looking for. The longer the blanching, the tougher is the meat.

  • Put the sliced salted vegetables and meat balls back to the soup, add seasonings of your choice. If preferred, you can throw in all the cut meat into the broth and off the heat. Alternatively, you can put the meat in the bowl of serving and put the soup on top.  Garnish with fresh corianders, deep fried shallots and white pepper  before serving.  The soup goes well with a bowl of yam rice or white rice.

NOTES

  • If you do not have a pressure cooker, you can use the same method but boil over the stove. You have to monitor the timing. The sequence of the meat added can also be changed to suit your steps.

  • Theoretically, no seasoning shall be added as the soup should have the sweetness from the meat and saltiness from the salted vegetable. However, this will also depend on the amount of water of use. Therefore, do adjust accordingly to your preference.

CONCLUSION

I hope I do not scare all of you away with such exotic organs in the recipe. In fact, I really took out my courage to write this post. Honestly, there are many organs that I do not eat also. However, for the sake of issuing this traditional recipe, I have shared the recipe as complete as I could .. Of course readers have the choice to choose the type of ingredients you want. It can be just as simple as pork fillets , meat balls and salted vegetable. Lastly, in Singapore, butcher are rather helpful in the wet market. Ask them for advise and slice for you telling them what you intend to buy the meat for.. They are more than happy to help you.. If they refused, move to the next stall and I am sure there are some stalls who are willing to help you.
