WHAT IS REQUIRED

- 1 kg of mixed fruits
- 360 grams (3 cups) of self raising flour
- 750 ml or grams (3 cups) of fruit juices
STEPS OF PREPARATION
- Soaked the dried fruits in the fruit juices for at least 2 hours and best overnight in fridge. Set aside.
- Line or lightly grease the interior of the baking tin. Fold some baking paper and wrap around the baking tin. The main purpose of this step is to prevent the cake for forming a thick crust due to its long baking hours.
- Pre-heat the oven to 150 degree Celsius and put a tray of water on the lowest layer.
- Lightly mix the flour and soaked fruits until it forms a batter. Transfer the batter into the baking tin. Level it and bake in the pre-heated oven of 150 degree Celsius for at least 2 hours or until a skewer inserts into the centre comes out clean. If the cake browns too fast, cover the top with a piece of aluminium foil.
- Cool completely before dislodge and cut. If preferred, you can pierce some holes in the fruit cake and inject with your favourite alcohol.
