I have prepared a batch of Christmassy nougats with homemade marshmallows. I confirmed that homemade marshmallows can be used and since i have already tone down the sweetness of homemade marshmallows, as such this batch of nougats is also less sweet when compared to commercially sold. There is nothing wrong with these nougats. It is a very successful attempt .. At least me and my family members like the texture, slightly soft and chewy.. Not really sweet and with mouthful of mixed nuts.
It does not really look like the commercial sold nougats because of the following reasons. One of them was I did not warp it in glutinous rice paper or oblaat (糯米纸).. Yes, that type of thin and translucent rice paper that you can eat … Since my last post on White rabbit milk candy: Homemade White Rabbit Creamy Candy (自制“大白兔”牛奶糖)issued about a year ago, I still do not know where can we obtain these locally in Singapore. May be if readers are interested, you can see if you can purchase it from Chinese websites like Taobao or not. Without wrapping the nougats with these rice papers , the nougat looked rather unattractive.
Secondly is the type of nuts of used. I have used a mixture of almond, walnuts, sunflower seeds and water melon seeds. Commercial sold version either only used whole almond or peanuts. There is no small nuts and if you look at my picture, my nougats looked rather compact scattering all over the nougats making the white portion looked very minimal.
Yes, the white portion indeed is lesser because I used less marshmallows as intended. Original recipe needs 300 grams of marshmallows, since one pack of marshmallows sold in Singapore weighed 250 grams, I am not willing to buy another packet and hence I used more nuts to marshmallow ratio. The result is it is more delicious since there are more nuts but with a nuts overload look. For this recipe, I will adjust the nuts quantity such that it is easier for you to try out the recipe.
There are two types of recipe in the internet. The original version is using egg white, maltose and sugar. Another one is the simplified version of using marshmallows. Both these methods yields the same type of texture of nougats. I have decided to use the marshmallow simpler method for this illustration.

WHAT IS REQUIRED
Servings: One small size Chinese New Year Cookies bottle
- 250 grams of marshmallows
- 250 grams of roasted almonds or mixed nuts
- 100 grams of butter
- 200 grams of milk powder
STEPS OF PREPARATION
- Lightly grease a tin of 6” x 6” or line the baking tray with greaseproof baking paper.
- Roast the mixed nuts in the oven at 150 degree Celsius for 15-20 minutes or until aromatic. If you bought the ready roasted peanut, please by pass this step. If you do not have an oven, you can pan fry in a non stick pan.
- In a pan, melt the butter under low heat. add the marshmallows and stir until the marshmallows are melted. Add the milk powder, stir until well mixed follow by the mixed nuts. Stir until it forms a thick dough.
- Transfer to the greased baking tray, use a lightly greased rolling pin (or another piece of greaseproof baking paper on top) to quickly roll it flat with about 1.5 cm in height. While it is still warm, use a pizza cutter to cut into sizes of your choice. Chill in the fridge for 1 hour before serving.
CONCLUSION
A very simple recipe. The sweetness is just nice for me. Do give it a try and let me know if it suits your taste buds… Lastly, i have to apologize that the naming of the images are wrong, it should be mixed nuts nougats instead of mixed fruits nougats.
