Cantonese Wanton Noodle Soup (港式云吞汤面)- RECIPE

Wanton recipe

  • 150 grams of minced pork
  • 200 grams of prawns, shelled
  • Around 25-30 wanton wrappers
  • 2 sprigs of spring onion
  • 1 tablespoon of dried flounder powder (地鱼粉) – optional
  • 1 tablespoon of corn starch
  • 1 teaspoon of sesame oil
  • 1 tablespoon of Chinese cooking wine
  • Salt to taste
  • Sugar to taste
  • Dashes of white pepper
  • 1 egg white

  • One litre of chicken broth
  • Few sprigs of spring onion
  • 2 tablespoon of flounder powder
  • 200 grams of dried or fresh wanton noodles
  • Dashes of white pepper
  • Chicken stock powder (only if the broth is not adequate and water added)
  • Salt to taste

STEPS OF PREPARATION

  • Cut part of your prawns into 1 cm cube. You need about 30 prawn cubes. Marinate the prawns with pinches of salt and Chinese cooking wine. Set aside.

  • Chopped the minced meat and the remaining prawns as fine as possible. Add the corn starch, chopped spring onion, dried flounder powder, sesame oil, sugar and dashes of white pepper. Continue chopping until it become a very sticky paste. To expedite the process, you can put everything in a food processor and blend until it become a sticky paste.

  • Take a piece of wanton wrapper. Wet the two edges with the egg white. Put a piece of prawns and some minced meat. Fold in into half and becomes a triangular shape. Wait the two corners with more egg whites. Fold the two corners downward and seal the edges. You can also refer to the video below .

  • Bring a pot of water to boil , once it boils, drop the wanton . When the wanton floats upwards, drain and set aside. To prevent the wanton from sticking to each other, you may want to put the wanton in a bowl of cooked water.

  • Use the same pot of water to blanch the noodles until soft. The timing will very much depends on the type of wanton noodles. However, for every package of wanton noodles, be it dried or fresh wanton noodles, it usually comes with a set of cooking instruction. Follow the timing in the package for best result. In general, 2-3 minutes is a guideline. Drain the wanton noodles and transfer directly to the serving bowl.

  • To make the broth, boil the chicken broth with the dried flounder powder (optional). If the package broth is not enough, you can add in more water and adjust the flavouring by adding some salt and chicken stock powder. Traditionally, this broth is from the boiling of chicken and pork bones and dried flounder.

  • For serving, in the bowl with the noodles, put some cooked wanton and additional chicken broth until the broth at least cover the noodles. Topped with some white pepper and chopped spring onion if desired.
