
INTRODUCTION
This is not my invention, it is one of the mooncakes sold in Singapore.. Every year during the mooncake fair, you will see this mooncake being sold. However, I am unsure about the history and whether it is available in other countries including Malaysia.
In fact, I did not intend to share anymore mooncake recipe this year but since one reader was asking for the recipe this year, and i have all the ingredients at home, I have therefore decide to design a recipe. I also remember some members are asking for the recipe 2 years ago.
I studied a few recipes in the internet but I ended up using back my recipe by doing some modifications on the recipe of short crust pastry mooncake as in this post: Shanghai Moon Cake (上海月饼).
The size of this mooncake is rather small, it has a crispy crust and some walnuts to munch on. Some have salted egg yolks being added to the lotus paste fillings.
This illustration yields rather good crust after my modification and I am very satisfied with this batch of mooncakes..
WHAT IS REQUIRED
Servings: 8 small size walnut mooncakes
Fillings:
- About 20 grams of toasted walnuts, cut into half
- 200 grams of lotus paste divided into 8 balls
- 2 or 4 salted egg yolks divided into 8 pieces (pre-steamed for 5 minutes or microwave for 20 seconds)
* as the mooncake is very small, in my humble opinion, 1/4 salted egg yolk is adequate.
Short Crust Pastry
- 50 grams of butter, chilled and cut into cubes and keep in the fridge waiting for later use
- 25 grams of beaten eggs
- 100 grams of self raising flour, sifted
- 20 grams of icing sugar powder
- About 20 grams of toasted walnuts, cut into half
Egg washing

1 egg yolk plus 1 tablespoon of milk plus a few drops of cooking oil, beat and sift
STEPS OF PREPARATION
- Pre-heat the oven to 180 degree Celsius .
- Take a ball of lotus paste, wrap a piece of salted egg yolk. Shape round and put a few pieces of toasted walnuts, shape round again. Set aside.
- Sift self raising flour and icing sugar in a bowl. Add the cold butter and use fingertips to rub the butter until it resembles some crumbs. Add the beaten eggs , lightly handle until it forms a pliable dough. Divide the dough into 8 pieces.
- Take a piece of dough, lightly flatten it, wrap the filling with the dough. Seal all edges. Press 2-3 walnuts on the side. Egg wash the surface and bake in the pre-heated oven of 180 degree Celsius for 15-20 minutes. Cool completely before cutting.
CONCLUSION
This is not a difficult recipe after my simplification. For those who are looking for this recipe, hope it helps and do give it a try.
