I seldom said my bake is delicious but this one I have to say it loud and clear that it is delicious and kids has been asking for more which is rather unusual and this is prepared using an ingredients that I am totally not familiar with .
Zucchini, a vegetable that starts with Z and has 2 Cs in the spelling is so alien to me. I can remember this name because of the unusual spelling but it is not something common in the region when I was a kid. I only saw supermarket start selling zucchini in recent years.. I never bought as I do not know how to prepare at all. It looks like cucumber but I was told that it is not and cannot be eaten raw..
My neighbours saw that some zucchinis were sold very cheaply at the wet market , she said she can’t resist and bought it . Since she does not how to cook and she therefore decided to give it to me. She works at a wet market and when she saw good deal, she will buy and shared out with my families ..
The first things that come across my mind is to prepare zucchini slices. I saw member of Facebook Group always prepared this and that sparks my interest of getting rid off the zucchini by trying a recipe i randomly picked from the internet though i have amended here and there to suit local context.
Yes, the slices really suits our taste buds. To be frank, the zucchinis are rather redundant as it does not have any aroma on its own. However, it does provide some flavour and definitely another way of consuming the vegetables. The slice is more of a bacon/ham flavoured cheesy slices..
WHAT IS REQUIRED
Servings: Prepare an 8 inches tray of zucchini slices
- 400 grams of shredded zucchini
- 200 grams of ham or bacon
- 180 grams of self raising flour
- 60 grams of vegetable oil
- 1 big onion
- 1 cup of grated cheddar cheese
- 5 eggs
- Pinches of salt
- 1/2 teaspoon of chicken stock powder
- Dashes of black pepper
STEPS OF PREPARATION
- Pre-heat the oven to 170 degree Celsius.
- Light greased an 8” x 8” baking tin.
- Peel of the skin of the zucchini and shred it into small pieces. Use the same shredder to shred the onion. Add the chopped ham or bacon followed the grated cheese, vegetable oil and eggs. Stir until well combined.
- Sift the flour on to the liquid mixture and stir until well mixed. Transfer the batter to the greased baking tin and bake in the preheated oven for 35-40 minutes or until a skewer inserted into the centre comes out clean.
- Cool completely before cutting into slices .
