I have eaten hash browns but it is not something I am very familiar with. i don’t even ever buy the ready packed frozen hash browns in the supermarket. However, I have eaten a few times in the restaurant usually served during breakfast. The one that I have eaten are rather greasy and soft and it is not the crispy type that many recipes claimed. Possibly I am not lucky enough to have a chance to try those crispy type.

This recipe is issued because of my daughter. I don’t remember we have ever eaten hash browns together at home or elsewhere. I am unsure where she gets to know hash browns but I believed it is the cartoons or TV programs that have this simple food. or is possible the rosti served in Ikea restaurants? She has been pestering me for at least 2 months before I laid my hands doing this. It is funny that anything made from potatoes will attract the attention of kids and my kids have the same appetite for potatoes from mashed potatoes to potatoes chips to Chinese style stir fry shredded potatoes or stewed potatoes.

All recipes for hash browns are as simple as ABC but many recipes will stress on how to get crispy hash browns. It is not difficult either with one two extra steps. In addition, it is also common sense that to get crispiness, your hash browns have to be very thin and to be served immediately when it is pan fried. But what is commonly seen in the internet and served in the restaurants are rather thick. Logically, it cannot be that crispy. If that is acceptable to readers, the recipes will be extremely easy.

WHAT IS REQUIRED

Servings: About 3-4 adult servings

  • 2-3 medium size potatoes
  • 1 tablespoon of butter or olive oil or cooking oils
  • 1 shallot, minced  (optional)
  • Pinches of salt
  • Dashes of black pepper (optional)
  • One egg white

STEPS OF PREPARATION

  • De-skin the potatoes and shred the potatoes in a basin of water. Let them soak in the water and change water every 15 minutes for at least two times. The main purpose is to wash away the starches such that the shredded potatoes are crunchier.  In this process, you will witness initially, the water is very milky. After changing two times, the water will become clearer meaning there are minimum starches in the shredded potatoes.  Drain and set aside.

  • In a bowl, put the shredded potatoes, add the minced shallot, dashes of white pepper, pinches or salt and crack the egg white. Stir until well combined.

  • Heat up a pan with a thin layer of cooking oil or butter. Put 1-2 tablespoons of shredded potatoes and pan fry under medium heat until one side is golden brown. Flip over and pan fry the other side until golden brown. Drain and best served hot when the hash browns are cooked. it will take at least 5 minutes per side depending on your size.  Note that the thinner it is , the crispier it will be.

An easy recipe for everyone to try. This is a recipe that is unlikely to go wrong and if you are constantly buying those from the supermarket frozen section, you can try this recipe.
